Cardamom Honey Gold Rush
A fall-inspired Gold Rush featuring bourbon, fresh lemon, and cardamom honey. Three ingredients, plenty of flavor, and no pumpkin.

This week's cocktail wasn't supposed to be anything unusual.
I wanted to make a Gold Rush. Bourbon, lemon juice, honey syrup. Three ingredients, a quick shake, and done. Except the only honey I had was cardamom honey.
Well, that works too.
Why I Tried This
I've had good luck combining cardamom and bourbon before, so I wasn't particularly worried about the substitution. Besides, I wasn't about to make a special trip for a jar of regular honey.
The Gold Rush is already a terrific cocktail, and I figured the cardamom might give it a little fall character.

Just a quick note: it takes time and a not-insigificant amount of treasure to keep this little venture afloat. Please consider a small donation to the cause. Thank you!

How It Turned Out
Sweetness: The honey provides a rich sweetness, balanced by the fresh lemon juice.
Balance: The cardamom is definitely noticeable, but it complements the honey and bourbon rather than fighting them. The lemon keeps everything from getting too sweet.
Mouth Feel: The honey syrup gives the drink a pleasantly rich texture without making it heavy.
Notes & Fine Tuning
I stuck with the classic Gold Rush proportions: 2 ounces bourbon, 3/4 ounce lemon juice, and 3/4 ounce honey syrup, using cardamom honey.
No additional spices, no complicated techniques, and no adjustments necessary.
The result is a Gold Rush that feels right at home in the fall. And despite the seasonal flavor, there's not a drop of pumpkin anything involved.
Your shaker. Your call.
