Bourbon Fernet Cocktail

A bourbon-based riff on the Toronto cocktail featuring Fernet-Branca, rich demerara syrup, and plenty of herbal complexity.

Why I Tried This

This Bourbon Fernet Cocktail is inspired by the classic Toronto, but uses bourbon instead of rye for a slightly richer, rounder profile. The Fernet starts out bold, then slowly blooms in the glass until everything comes together into a nicely balanced cocktail. It's still unmistakably Fernet, but now it's one I actually want to make again. If you've been Fernet-curious (or Fernet-skeptical), this might be the place to start.

How It Turned Out

Sweetness: Just enough demerara to soften the bitterness without making the drink taste like a sugar bomb.

Balance: Bourbon provides warmth and caramel while Fernet-Branca contributes layers of mint, herbs, and gentle bitterness. Neither ingredient dominates once the cocktail has had a minute or two to settle.

Mouth Feel: Rich, silky, and spirit-forward with a long, pleasantly herbal finish.

Notes & Fine Tuning

  • My first instinct was to reduce the demerara syrup to ⅛ oz, but after several rounds of testing, a scant ¼ oz proved to be the sweet spot.
  • This is one of those rare cocktails that genuinely improves after sitting for a couple of minutes. Don't rush the first sip! The Fernet "blooms" noticeably as it opens up.
  • If you're after a more traditional Toronto experience, substitute a Canadian rye for the bourbon. If, like me, you enjoy bourbon's softer caramel notes, this version is absolutely worth making again.
